A Deeper Dive into Traditional Poké Toppings

Dennis Bok • Jun 24, 2023

Poké is a popular Hawaiian dish that has taken the culinary world by storm. Its fans adore it for its vibrant flavors and fresh ingredients. While the base of the bowl typically consists of diced raw fish, it's the toppings that truly elevate the experience. At any poké bar, you can find familiar ingredients like carrots, cabbage slaw, and radishes. However, you will also find some more traditional, though likely unfamiliar, toppings. If you have been curious about some of these, but felt a bit nervous to ask about them, now's your chance to learn about traditional poké toppings.

Kani Salad

This topping is crab salad—but with a kick. Kani salad is simple and tasty. It contains imitation crab sticks, mayonnaise, sriracha sauce, and sometimes carrots or cucumber sticks.

Ogo and Hijiki Seaweed

Seaweed is a staple in many Asian cuisines, and poké is no exception. Two varieties you may find in poké bars are ogo and hijiki. Ogo seaweed adds a nice crunch and some naturally salty flavor. Hijiki seaweed is more earthy and offers a more tender, chewy texture.

Tobiko

This topping may take you a little further out of your comfort zone, but it is worth trying. Tobiko is flying fish roe. The bright orange, tiny, crunchy eggs are known for their mild, slightly salty taste.

Togarashi

This Japanese spice blend packs a punch. It contains seven ingredients, including a mixture of chili peppers. It will add a fiery element to any poké bowl.

Furikake

This versatile Japanese seasoning is a popular poké bowl topping. It typically consists of dried seaweed, sesame seeds, and dried fish.

Shoyu

Technically, this is a sauce rather than a topping, but many people aren't as familiar with it. Shoya is the Japanese name for soy sauce.
